“Died and Gone to Heaven” Corn Bread
In a large mixing bowl mix together the flour, cornmeal, baking powder, salt, sugar and cheeses. Mix well being sure the cheese is not lumped. In another bowl mix together the eggs, corn, chilies and softened butter. There will be small lumps of butter. Add the dry ingredients to the wet ingredients and stir just until no dry mix remains visible.
Turn into prepared pan and smooth the top. Place on middle rack of the preheated 350 degree oven and bake 35 to 45 minutes. When done bread should be light golden on top and a toothpick will come out clean from the center.
* Also good baked as muffins, makes about 24 average size. Be sure to
butter and parchment the muffin tins.
