“Died and Gone to Heaven” Corn Bread

Ingredients:
1 c. flour
1 c. yellow cornmeal
1 T. baking powder
1 T. table salt
1/2 c. sugar
4 c. fresh corn cut from the cob
½ c. grated cheddar cheese
½ c. grated jack cheese
1, 4 oz. can diced green chilies, mild
5 eggs, lightly beaten
1 stick softened butter

Instructions:
Preheat oven to 350 degrees. Butter the bottom and sides of a 9 by 13 inch pan and place baking parchment on the bottom.

In a large mixing bowl mix together the flour, cornmeal, baking powder, salt, sugar and cheeses. Mix well being sure the cheese is not lumped. In another bowl mix together the eggs, corn, chilies and softened butter. There will be small lumps of butter. Add the dry ingredients to the wet ingredients and stir just until no dry mix remains visible.

Turn into prepared pan and smooth the top. Place on middle rack of the preheated 350 degree oven and bake 35 to 45 minutes. When done bread should be light golden on top and a toothpick will come out clean from the center.

* Also good baked as muffins, makes about 24 average size. Be sure to butter and parchment the muffin tins.
