Caesar Salad Dressing


¼ cup freshly squeezed lemon juice
2 cloves garlic, minced
2 t. kosher salt (Diamond Brand) or 1 t. table salt
½ t. freshly ground black pepper
6 T. good quality commercial mayonnaise
1 c. extra virgin olive oil
Freshly grated Reggiano Parmesan cheese to taste.

Whisk together until very well incorporated the first 6 ingredients. Let dressing sit an hour before serving allowing flavors to meld.

Caesar Salad: Place crisp broken up romaine hearts in salad bowl and add croutons, toss with Caesar Dressing. Sprinkle salad with Reggiano Parmesan cheese to taste, toss again lightly and serve
